Cauliflower Cheese Recipe

This easy Cauliflower cheese recipe can be eaten as a main course, for lunch or dinner, or as a side dish. Making cauliflower cheese with bacon is just one simple variation to this cauliflower cheese recipe.

 ★ Ingredients ★ 

  • 1 large cauliflower
  • 500 ml milk
  • 4 tbsp flour
  • 1/2 tsp salt
  • 50 g butter
  • 150 g tasty cheese

 ★ Instructions ★ 

  1. Preheat oven to 200℃
  2. Prepare cauliflower by by removing the leaves then cutting the head in to florets.
  3. Bring a large saucepan of water to the boil, then add the cauliflower and salt. Bring to boil and simmer for 5 mins.
  4. Lift out a piece to test, it should be cooked, still firm but not mushy.
  5. Drain the cauliflower, then place into an oven dish.
  6. Grate cheese.
  7. Put the saucepan back on the heat and add the milk, flour and butter. Whisk fast as the butter melts and the mixture comes to the boil. The flour will disappear and the sauce will begin to thicken. Whisk for 2 mins while the sauce bubbles and becomes nice and thick.
  8. Take off the heat, stir in 2/3 of the cheese.
  9. Pour over the cauliflower. Scatter the remaining 1/3 cheese over the top.
  10. Place in the pre heated oven and bake for 20 mins until bubbling.

 ★ Recipe Notes ★ 

Easy Cauliflower Cheese Variations

  • Mix 2-3 tbsp of breadcrumbs with the remaining cheese before scatterering over the top.
  • Dice an onion and stir in when adding the cheese.
  • To make cauliflower cheese with bacon just dice 75-100 grams bacon and stir in when adding the cheese.
