 ★ Ingredients ★ 

  • 1.5 kg Raw Corned Silverside
  • Cup Brown Vinegar
  • ½ Cup Brown Sugar
  • 1 large brown onion

 ★ Instructions ★ 

  1. Slice onions
  2. Place the vinegar, sugar and onions in a large, heavy-based deep saucepan. Add some water and stir to dissolve brown sugar.
  3. Add the beef and cover with water.
  4. Place over high heat and bring to the boil.
  5. Reduce the heat, cover and Simmer (do not boil) for 2 hours 30 minutes.
  6. The beef should be firm to the touch.
  7. Drain and leave to rest.

 ★ Recipe Notes ★ 

Slow Cooker Corned Beef

  1. Follow above steps 1 & 2, but instead of using a saucepan put everything in your slow cooker.
  2. Add 2 cups warm water and stir sugar in.
  3. Add meat and cook in slow cooker on low for 6 hours.

Corned Beef Sauce Accompaniments

All these are great to have with your corned beef.

  • Roux (white sauce).
  • Cheese Sauce.
  • Parsley Sauce.
  • Tomato Relish.

Corned Beef Serving Suggestions

  • Serve with mashed potato and steamed greens.
  • Corned beef with cabbage sauted with bacon, onion and cream
  • Spoon some warm green tomato relish over the meat and serve with broccoli and mashed potatoes.
  • Mashed potato, peas, carrots and white sauce
  • In sandwiches with sliced tomato or tomato relish and cheese
  • Rolled in a wrap with fresh salad

Corned Beef Recipe Variations

Add any of the following -

  • 1 celery stick, coarsely chopped, leaves included
  • 1 tsp cracked peppercorns
  • 1 carrot, coarsely chopped
  • 1 garlic bulb, halved
  • 2 bay leaves
  • 1 teaspoon cloves
  • 1/3 cup chopped flat-leaf parsley
